Ingredients

  • 2 Cups Milk
  • 1 Cup Sugar
  • 2 Tbs. Cornstarch
  • 1 Cup Coconut, finely shredded
  • 1/4 tsp. Salt
  • 3 Tbs. Butter or Margarine
  • 1 tsp. Coconut Flavoring
  • 2 Egg Yolks (save whites for meringue)

Step 1

Heat milk. Mix sugar, cornstarch, coconut, salt, butter and egg yolks. Add to heated milk, stirring constantly. Pour into 1 unbaked pie crust and bake until nearly done. Put meringue on top and sprinkle with coconut, then put back into the oven until meringue is a nice golden brown.
