Ingredients
- 2/3 - 3/4 cup granulated sugar (*3/4 cup)
- 1/4 cup cornstarch (corn flour) (5 tbsp)
- 2 tsp freshly grated lemon peel (3 tsp)
- 1/8 tsp ground allspice (1/4 tsp)
- 1/8 tsp ground cinnamon (1/4 tsp)
- 1/8 tsp kosher salt (1/4 tsp)
- 6 cups blueberries (about 2 lbs) (9 cups)
- 1 tbsp butter cut into small squares
- 1 egg yolk
- 1 tbsp heavy cream
- 1 tbsp course sugar (garnish)
- 1 unbaked pie shell

Preparation
Step 1
Preheat oven to 450.
Stir sugar, cornstarch, lemon peel, allspice, cinnamon, and salt.
Add blueberries to mixture.
Add mixture to unbaked pie shell.
Top pie shell according to preference.
Place pie in refrigerator to chill.
Place cold pie in preheated oven, bake at 450 for 15 minutes, then reduce temperature to 400 or 375 for 1 hour 35 minutes.
