Ingredients

  • 1 lb. lean ground beef
  • 1 can 14 1/2 oz. Rotel w/green chilies undrained
  • 1 can 14 1/2 oz. beef broth
  • 1 T. chili powder
  • 1/4 t. salt
  • 1/8 t. garlic powder
  • 2 cups Uncle Bens instant brown rice
  • 1 ea. medium sweet red and green peppers sliced and diced

Step 1

In a skillet, cook beef over medium heat 6-8 minutes or until no longer pink, drain. Add tomatoes, broth, chili powder, salt and garlic powder; bring to a boil. Stir in rice and peppers. Reduce heat; simmer, covered 8-10 minutes or until liquid is absorbed.
