Italian Soup

Ingredients

  • 3 tablespoons of olive oil
  • 1 pound of rotisserie chicken shredded
  • 1 pound of spicy sausage links cut into bite size pieces
  • 2 medium zucchini
  • 1 small onion
  • 3 medium carrots peeled and sliced
  • 1 box of chicken broth or two cans of chicken broth
  • 1 can of diced tomatoes (14.5 ounces)
  • 1.5 teaspoons of Italian seasoning
  • 1.0 teaspoons of garlic powder
  • Salt and pepper to taste
  • (variations) any vegetables

Preparation

Step 1

Sauté chopped onion and sliced carrots for 10-minutes in olive oil.
Add spicy sausage (slice into bite size pieces).
Add shredded chicken and saute for 5-10 minutes.
Add diced tomatoes and chicken broth.
Add Italian seasoning, salt, pepper and garlic powder.
Add sliced zuchinni.
Simmer for 45 minutes.
Add more chicken broth, as needed.
