Ingredients

  • Sweet and Sour Sauce
  • 1/2 C. Pineapple Juice (from slices)
  • 1 T. Sugar
  • 1 T. Soy Sauce
  • 2 T. Vinegar
  • 2 T. Cornstarch
  • 2 T. Chopped Green Onion (or chopped white onion)

  • 4 Boneless Chicken Breast
  • 1/2 t. of Garlic Salt
  • 1 t. Paprika
  • 2 T. Flour
  • 3 T. Shortening
  • 4 small Yams (parboiled and Peeled)
  • 1-9 oz. can Pineapple Slices

Preparation

Step 1

Prepare the Sweet and Sour Sauce first.
Blend together the first 5 ingredients in a saucepan and cook until clear and thick. Add the chopped onion and set aside.

Place the shortening in a skillet and heat it.

Mix Garlic Salt, Paprika and Flour in a bowl and dredge the chicken in in flour mixture. Place in skillet and brown on both sides.

Cut 4 (12") squares of heavy Aluminum Foil. Place a chicken Breast and a Yam in the center of each square. Top with drained Pineapple slice and a spoon of the "Sweet & Sour Sauce".
Seal package with a drug store fold: bring two opposite edges of the foil together, folding over twice; fold ends in toward the center.
Arrange in shallow pan and bake @ 450 degrees for 25 to 30 minutes.
This is a delicious meal that can be made in advance. If made in advance, place in the refrigerator until time to bake. It may take 45 to 60 minutes to bake because of being refrigerated. Check frequently to determine the length of time.
