Hawaiian Pork/Chicken


I made this recipe for a Rainbow Girls dinner. It is a favorite of my family. I usually double the recipe. May use Chicken.

  • 1 lb boneless pork or chicken- cut in 1 inch cubes
  • 1 egg
  • 2 Tablespoon Flour
  • 1/2 tsp. pepper
  • Salt to Taste
  • 3 green pepper - 1 inch cubes
  • 3 Tablespoon shortening
  • 1/2 cup pineapple chucks
  • 2 1/2 Tablespoon cornstarch
  • 2 1/2 Tablespoon soy sauce
  • 1/4 cup. sugar
  • 1/4 cup vinegar
  • 1/2 cup pineapple juice
  • White rice



Step 1

Beat together-- egg flour, salt and pepper. Thoroughly cover cubes of pork in egg-flour batter. Brown on all sides in hot grease in frying pan--cover and cook 30 minutes. Boil 10 minutes in water and drain. Add green pepper and pineapple to meat. Mix in saucepan -cornstarch, soy sauce, sugar, vinegar and cook until clear. Pour over meat mixture and simmer. Serves over rice.
