Name Your Cheesecake

Crust: Microwave margarine in nine-inch round cake pan for one minute or until melted. Add remaining ingredients and press mixture on bottom and halfway up sides of dish. Microwave one minute. Filling: Microwave cream cheese in glass bowl on warm for one minute, or let cream cheese come to room temp. Add eggs, one at a time, and mix well. Add sugar, lemon juice and rind and beat until smooth. Pour into graham cracker crust and microwave 6-6 1/2 minutes. Chill before serving. Kiwi Cheesecake: Spread apricot jam on top of cheesecake and garnish with thinly sliced, peeled kiwi. Strawberry Cheesecake: Spread strawberry jam on cheesecake. Garnish with fresh strawberries. *The warm setting will soften cream cheese as it comes from the fridge.
