Name Your Cheesecake
- 1 1/4 c graham cracker crumbs
- 1/4 c sugar
- 1/4 c margarine
- Dash cinnamon
- 8-oz pkg cream cheese
- 3-oz pkg cream cheese
- 2 eggs
- 1/3 c sugar
- 1 tsp lemon juice
- 1 tsp grated lemon rind
Microwave margarine in nine-inch round cake pan for one minute or until melted.
Add remaining ingredients and press mixture on bottom and halfway up sides of dish.
Microwave one minute.
Microwave cream cheese in glass bowl on warm for one minute, or let cream cheese come to room temp.
Add eggs, one at a time, and mix well.
Add sugar, lemon juice and rind and beat until smooth.
Pour into graham cracker crust and microwave 6-6 1/2 minutes.
Chill before serving.
Spread apricot jam on top of cheesecake and garnish with thinly sliced, peeled kiwi.
Spread strawberry jam on cheesecake. Garnish with fresh strawberries.
*The warm setting will soften cream cheese as it comes from the fridge.
