Pork Chops with Lemon-Caper Sauce

Ingredients

  • 1/2 cup all- purpose flour
  • 1/8 t salt
  • 3 T Italian-seasoned breadcrumbs
  • 3 T preshredded fresh Parmesan cheese
  • 1/4 t black pepper
  • 1 large egg white, slightly beaten
  • 4 (4 oz) boneless center-cut pork chops (1/2 inch thick)
  • 2 t olive oil
  • 1/2 cup chicken broth
  • 1 T dry white wine
  • 1/2 t grated lemon rind
  • 1 T fresh lemon juice
  • 2 t capers, rinsed and drained

Preparation

Step 1

Dredge pork chop in flour & salt, then in egg white and last in breadcrumbs with cheese and pepper
Spray chops with cooking spray. Add pork chops to pan in which olive oil has been added and heated over med hi heat. Cook 4 minutes on each side or until done. Remove from pan and keep warm Add broth & remaining ingredients to pan, scraping pan to loosen browned bits. Cook 2 minutes or until reduced to 1/4 cup. Serve with pork.
