Black Bean Dip

Ingredients

  • 2 cups canned black beans, drained and rinsed
  • 1 1/2 cups canned shoe peg corn (a variety of white sweet corn), drained and rinsed
  • 1 medium red or green pepper, diced
  • 2 tablespoons red wine vinegar
  • 2 cloves garlic, minced
  • 1 cup salsa

Preparation

Step 1

Mix beans, corn and pepper in a bowl. In a separate bowl, mix red wine vinegar, garlic and salsa. Pour salsa into beans and corn. Mix well. Serve with blue corn chips.
