Rotini with Ham and Peas

Ingredients

  • 8 ounces rotini pasta
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 medium yellow onion, chopped
  • 2 tablespoons olive oil
  • 1 cup peas, canned or frozen
  • 1 1/2 cups diced, cooked ham
  • 1/4 cup pasta water
  • 1/2 cup sour cream

Preparation

Step 1

Cook the pasta to al dente in boiling salted water, reserving 1/4 cup of pasta water. Drain the rest and return the pasta to the pot.

While the pasta cooks, heat the oil in a large skillet over medium high heat. Add the onion and cook until translucent and soft, 3-5 minutes. Add the ham and peas if frozen) and cook until heated through. Season with salt and pepper.

Add the pasta to the ham mixture, then carefully stir in the sour cream and pasta water, stirring until combined and the sauce has thickened and is well blended.
