Ingredients

  • Meringue:
  • 1 Cup Sugar
  • 1/3 Cup Cornstarch
  • 1/4 tsp. Salt
  • 1/2 Cup Cold Water
  • 1/2 Cup Lemon Juice
  • 3 Egg Yolks
  • 2 Tbs. Butter
  • 1 1/2 Cup Boiling Water
  • 1 Baked Pie Crust
  • 6 tsp. Cream of Tartar
  • 6 Tbs. Sugar
  • 3 Egg Whites
  • 1 tsp. Lemon Juice

Preparation

Step 1

Mix sugar, cornstarch, salt, water and lemon juice together. Add yolks and butter; then boiling water. Bring to a boil on medium heat and boil 1 minute, stirring constantly. To make meringue: Beat egg whites and cream of tartar. Add sugar, 2 Tbs. at a time, beating well. Spread over pie and brown in oven.
