Turkey & [Brown Rice] Salad

I substituted brown rice for barley.

Ingredients

  • 3/4 c brown rice
  • 2 c baby arugula
  • 2 c roasted turkey, shredded
  • 1/2 c dried cranberries
  • 3 T EVOO
  • 2 T fresh lemon juice
  • salt & pepper

Preparation

Step 1

Cook brown rice accordingly. Drain & rinse under cold water. Transfer to a lg bowl & toss w/ arugula, turkey, cranberries, EVOO, and lemon juice. Season w/ salt & pepper.
