Lee's Green Chili Stew with Pork

Ingredients

  • 2 # lean pork, diced 3 T cooking oil
  • 1 qt chicken broth (canned)^* 1 large onion, chopped
  • 1 Tbsp oregano 1 tsp. cumin
  • 1 Tbsp parsley 1 Tbsp salt
  • 1/2 tsp pepper 12 oz green chilies diced*
  • 15 oz can diced tomatoes 1/2 cup Flour
  • 1/2 tsp garlic powder or 2 cloves, minced
  • Canned chilies can be used but fresh roasted makes a better chili
  • 4 cups water & 4 bouillon cubes

Step 1

For the Pork: Into flour put a sprinkle of garlic powder and salt & pepper. Flour pork and put in pan and fry till lightly browned. I cook small batches so they cook a little faster.

In a large soup pan: Add all other ingredients to pork and drippings. Simmer for about 1 hour until pork is tender. Serve over burritos.

* I use whole chilies after they have been roasted, seeded and diced. I use Big Jim’s since they are larger and meatier. I get mine roasted from the Garden Center end of September or earlu October usually do about ½ bushel which makes about 9 - 10- 12oz bags chilies.

The Garden center roasts them and puts them in a heavy plastic bag. By the time I get home they are still hot. I put them in a sink of cold water and clean off the skins. They slip off really easy when roasted like this. Then I cut off the top and a little piece of the bottom (so they are square and lay flat) and scrape out seeds and veins.

I weigh each bag to hold about 12 oz of chilies laid flat. Then I freeze till I need. The smaller bags, I put in a large freezer bag so they don't get freezer burn before I use them. If you have a Seal=a-Matic that is ideal.

One 12 oz bag usually will do for a pot of chili. You can also roast chilies on the gas grill, but you have to watch them closely or in the oven on cookie sheets. Too much work so I buy them roasted.

I also understand that Wal Mart sells them in bags already roasted, cleaned and chopped in their freezer section.

Canned chilis can be used but the flavor is a little different. Of course, if you never had them with fresh roasted chilis you won't notice the difference.
