Easy Chicken Cobbler

Ingredients

  • 2 c. diced, cooked chicken
  • 1 c. cooked rice
  • 2 c. chicken broth
  • 1/4 c. butter
  • 1 c. plain flour
  • 2 tsp. baking powder
  • 1 tsp. salt
  • 1 Tbsp. sugar
  • 1 c. milk

DIRECTIONS

Mix first 3 ingredients and set aside. Put butter in a 1 1/2 quart round casserole and put in a 350 F oven until melted. Meanwhile, mix remaining ingredients. Pour into casserole on top of melted butter. Do not stir. Spoon chicken mixture into the center. Do not stir. Bake 50 minutes. Let stand 5 minutes before serving. Serves 6.

Add green peas, broccoli or mixed vegetables to the chicken mixture for extra color and taste.
