One-Pan Baked Chicken & Sweet Potatoes

This was a hit. I used lite Italian dressing and boneless skinless chicken thighs. I also added quartered yellow onions and whole mushrooms.

Ingredients

  • 1/2 cup KRAFT Zesty Italian Dressing
  • 3 ablespoons brown sugar
  • 1 Tablespoons chopped fresh thyme
  • 1 1/2 lb. sweet potatoes (about 3), cut into 3/4-inch-wide wedges
  • 1 broiler-fryer chicken (3 lb.), cut into 8 pieces

Preparation

Step 1

HEAT oven to 375ºF.

MIX dressing, sugar and thyme in large bowl. Add potatoes; toss to coat. Transfer potatoes to 15x10x1-inch pan, reserving dressing mixture in bowl.

ADD chicken to reserved dressing mixture; toss to coat. Place in pan with potatoes.

BAKE 1 hour or until potatoes are tender and chicken is done (165ºF). Transfer chicken and potatoes to platter. Strain drippings from pan; pour strained sauce over chicken.


Serving Suggestion
Serve with your favorite steamed vegetable to round out the meal.

Variation
Substitute fresh rosemary or 1 tsp. dried thyme leaves for the fresh thyme.

This was a hit with my family. Very easy to prepare. A nice weekend meal with lots of flavor.

Chicken was delicious - I doubled the sauce and marinated the chicken from the night before. The sweet potatoes in the pan were just ok. I had also bought extra sweet potates and baked them solo out of the pan, then made a simple mash with just a touch of butter - liked that better. Enjoy!

This is my favorite chicken recipe of all! I have made this so many times. It is super easy but it tastes super complicated!

I am not a sweet potato fan, but this was really good. Since I have a small family, I used 2 small sweet potatoes and 5 skinless chicken legs. I added the chicken the last 40 minutes. I didn't strain or pour the drippings over the chicken at the end. I didn't think it was worth the trouble. Perfect meal and I will definitely make again.

Made this tonight for dinner. Used 4 thighs with skin & bones for 2 of us. Added 1 large onion cut in wedges to the sweet potatoes and doubled the sauce. I also microwaved the potatoes first for a few minutes to make sure they cooked through in the oven. They were perfect and the chicken was very moist and full of flavor. No need to cover pan during cooking. Have enough left over for another meal. Was very tasty, hubby enjoyed too! Will def make again.

I made this yesterday and we all thought it was fantastic!! I served it with brown rice and everyone had seconds and raved about it :) I did have to double the sauce bc I think I had extra sweet potatoes. SOOO good!

Swapped italian dressing for Kraft vidalia onion vinaigrette. Also covered the pan with aluminum foil during cooking. Came out so delicious and moist!

We loved it, but it needed a little salt. Easy, easy!

The chicken was okay but really dried out. The recipe doesn't call for you to cover it and I think that would help. And the potatoes were very bland! Did not like this recipe at all and will not make again.

This was fast to put together and the taste was amazing! Chicken fell off the bone! Highly recommend it!

I made this dish but instead of using the sweet potatoes I decided to use red skin potatoes instead. My youngest son refuses to eat "orange" potatoes so I made it with something he likes and it was a hit all around the dinner table.

This was delicious! I used regular potatoes instead of sweet potatoes, and they turned out great.

The flavor of the chicken was ok, but not so good with the sweet potatoes...

I used Kraft Roasted Red Pepper Italian w/Parmesan dressing. The flavor was good, but I would recommend marinating the chicken to get more flavor into the meat of the chicken. The sweet potatoes were very tasty. I also used chicken wings instead. All in all, a good simple recipe.

A very easy recipe with few ingredients. I added some sliced red onions to the pan, just to give it a little extra flavor. It is super delicious!

This is super easy and delicious. The baked chicken was very moist and adding the drippings back over it baked really added the depth of flavor. I added onions to the sweet potatoes and they were delicious. I did read the comments first and I did double the sauce. It needed it. I will definitely make this again

I was not fond of the sauce, the Italian Dressing over sweet potatoes the combination did not go over well. I would have just seasoned everything with rosemary, tyme, oregano, and a few other hearbs & spices. Chicken was great.

Absolutely delicious, I decided to use, half tarragon and half thyme because I was using powdered thyme. Uhh, it was sooo good! The sweet of the brown sugar, and the spices all go so well together, I could eat the sauce just by itself! I made this for me and my honey, and I had spare for a one-person lunch the next day. I usually dont try new recipes, because they usually dont end up to great. But this one is going to definitely be a staple. Since, I used bone in chicken legs, I got all the chicken I needed for $2.50. Def a must in this economy.

Tastes great! My family loved it, even my five year old. You can substitue Ceasar for the Italian, and it still tastes good. Double the sauce mix, it doesn't go as far as you might think...

This dish was awesome and I cannot wait to have it again. I made it with bone in Chicken Breasts a few weeks ago. I will be making this again in the next few weeks.

This was a easy recipe. Followed the recipe except used 2 potatoes cuz they made alot of wedges. Will follow advice and dbl sauce. The house smelled wonderful while this was baking.

Cooked 2 sweet potatoes and 4 pieces of chicken (2 legs and 2 bone in theighs) and still wish i had doubled the sauce. The chicken was excellent! I didn't think brown sugar was going to pair well with thyme but it does so well!! I used dried thyme in the same quality as the fresh tasted great. Try it - at least with the chicken. Sweet Potatoes have lots of vitamins so I try to eat them but they aren't my fav veg so shrug. Whatever. Its fun to try new things. Seriously though try the chicken!! :)

This is an excellent recpie, I used bone-in chicken breasts and cut them in half before baking. I also put the sweet potatoes in a separate baking pan and stirred them around every 15 minutes or so. I used a little more dressing, the chicken came out very moist and the sweet potatoes perfectly seasoned and slightly crisp.

I used chicken breasts instead of a whole cut up chicken. I didn't think the chicken had any flavor and the sweet potatoes seemed dried out. Maybe it would be better if the chicken was marinated for a while in the dressing and to cover the dish during baking.

My family loved this!! I used the amount of dressing and brown sugar with fewer sweet potatoes, I was only cooking for 3 people. I also used boneless skinless chicken breasts. Turned out perfect!!

Wonderful fall recipe! I boiled the potatoes a few minutes before tossing so they would cook more evenly in my oven and used boneless skinless chicken breasts. It was wonderful! Doubled the sauce and it was the perfect amount. I also substituted a geneneric 'italian seasoning' (lots of green dried seasonings) for the thyme. YUM!

Super easy and delish!!!!! Pretty enough to make for guests. Def double the sauce. Oh and I added onion chunks which I think made the dish even better. And I used breasts since that was all I had and it was EXCELLENT!!!!!

Wonderful! Super easy to make and very tasty. I used chicken breasts because that is all I had on hand and it was great.

This meal was just okay. I liked the most of the chicken, some of it was too dry but the moist parts were very good with lots of flavor. The sweet potatoes I did not care for at all. I would make the chicken again with this marinade but not with the sweet potatoes.

I subbed Sundried Tomato dressing as I had it on hand for the Kraft salmon with fresh spinach recipe. I used only thighs for this, no cutting up the chicken only cutting work time! My family enjoyed this recipe.

I used rosemary in place of thyme. So easy & delicious! I made this using only boneless, skinless chicken breasts. The sauce has a wonderful flavor so next time I will increase the amount of dressing mixture so we'll have more sauce for the chicken.
