Dash of nutmeg
Mix together the eggs and milk with a whisk. Add the flour gradually until completely incorporated. Add the salt, sugar and nutmeg. Use two round oven proof baking pans. (I used my Le Cruset cast iron skillet, you could also use a pie dish.) Melt 3T of butter in each pan in the oven as the pre-heats to 425-450 degrees. When the butter is melted and oven is pre-heated, pour 1/2 of the batter into each pan and bake for 10-15 minutes. The pancake will puff up on the sides and become golden in the center when done! Serve with powdered sugar, fresh lemon and syrup, as desired. You can also serve with fruit, or jam.
