RHUBARB TEA BREAD

Ingredients

  • 3 eggs
  • 1 cup oil
  • 2 cups brown sugar
  • 2 teaspoons vanilla
  • 2 ½ cups rhubarb, chopped
  • ½ cup walnuts or ⁄ cup pecans, chopped
  • 3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons cinnamon
  • 1 teaspoon salt
  • ½ teaspoon baking powder
  • ½ teaspoon nutmeg
  • ½ teaspoon allspice

Preparation

Step 1

Beat eggs until thick and foamy.
Add oil, brown sugar, vanilla.
Beat well.
Stir in rhubarb, nuts.
Add remaining ingredients.
Mix well.
Pour into two greased and floured loaf pans.
Bake at 350° for one hour
