Pumpkin Cake with Caramel Cider Glaze

Ingredients

  • Cake
  • 1 1/2 cups sifted flour
  • 1 cup granulated sugar
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp ground cinnamon
  • dash of nutmeg
  • 3/4 cup vegetable oil
  • 1 15 oz can pumpkin
  • 2 eggs
  • Caramel Cider Glaze
  • 1/2 cup brown sugar
  • 1 tbsp cornstarch
  • 2/3 cup apple cider
  • 2 tbsp heavy cream
  • 1 tbsp butter
  • sea salt to taste

Preparation

Step 1

Cake
1.Preheat oven to 350. Combine the four, salt, baking powder, baking soda, cinnamon and nutmeg with a whisk.Add oil, pumpkin and eggs, whisk until blended
2.Pour into a 13x9 pan that has been greased with Pam. Bake for 30 minutes, toothpick inserted in the middle should come out clean.
3. Cool cake completely and top cake with cider glaze or serve cider glaze on each slice of cake and drizzle sauce on vanilla ice cream with the cake

Caramel Cider Glaze
1. In a saucepan, whisk brown sugar and cornstarch. Add cider and stir in cream, butter and salt.
2.Cook over medium high heat, whisking constantly, until large bubbles form around edge of saucepan about 3 minutes
3.Reduce heat to low and allow sauce to thicken about 2 minutes.
