Chicken Roll ups

Ingredients

  • Melted butter to coat chicken
  • Mushrooms chopped fine
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon nutmeg (optional)
  • Breadcrumbs
  • Parmesan cheese
  • Thin sliced chicken breasts
  • 3/4 cup heavy cream
  • Shallots
  • Spinach
  • White wine
  • Shredded cheese
  • Paprika (optional)
  • Thyme

Preparation

Step 1

Sauté mushrooms and shallots until most liquid is gone, add spinach. Cook down.
Add a couple tablespoons white wine and cheese to mixture. Add paprika.
Coat chicken with melted butter. Coat with breadcrumbs and parmesan cheese. Spread stuffing in center of chicken breast and roll up and place in baking dish. Pour cream with chicken bouillon in it over the dish , sprinkle with thyme and bake @350 for 40 minutes.

Different filling
1 can 14oz. tomatoes, mixed with 1 cup Italian cheese and 1/2 tsp. Italian seasoning.
