Ingredients
- 1/2 c sugar
- 1/2 c canola oil
- 3/4 c pumpkin purée
- 2 eggs or 1 egg and 1 white
- 1 c all-purpose flour
- 1/2 c whole wheat flour
- 1 t baking powder
- 1 t baking soda
- 1/2 t cinnamon
- 1/2 t nutmeg
- 1/2 t allspice
- 1/4 t cloves
- 1/4 t salt
- 1/4 c each dark and golden raisins
- 1/2 c chopped walnuts or pecans
Preparation
Step 1
From Jane Brody's good food book with additional spices
Mix all wet ingredients.
Mix all dry ingredients and fold into wet.
Add raisins and nuts.
Pour into one loaf is an or three mini loaf pans.
Bake for 45 to 60 minutes at 350 degrees.
