Gingery Sauteed Watercress and Shiitakes

Ingredients

  • 2 T canola oil
  • 1/2 lb shiitake mushrooms, stems removed & caps sliced
  • 4 cloves garlic, sliced
  • 1 T chopped fresh ginger
  • 2 bunches watercress, thick stems removed (about 6 cups)
  • Kosher salt
  • 1/2 t toasted sesame oil

Preparation

Step 1

1. Heat the canola oil in a lg skillet over med-high heat. Add the mushrooms & cook, tossing occasionally, until soft, 3-4 min.
2. Add the garlic & ginger to the skillet & cook until fragrant, ~ 1 min. Add the watercress & 1/2t salt & cook, tossing, until tender, 2-3 min more. Remove from heat, add the sesame oil, & toss to combine.
