Cookies and Cream Cheesecake Squares
- 1 (2 lb.) Chocolate Sandwich Cookies
- 2 Tbs. Butter or Margarine, melted
- 4 (8 oz.) Pkg. Cream Cheese
- 1 Cup Sugar
- 1 tsp. Vanilla
- 4 Eggs, beaten
Crush 20 of the cookies until finely ground. Add butter. Press into bottom of a 9 x 13 inch baking pan. Coarsely chop remaining 15 cookies; set aside. Mix cream cheese, sugar, and vanilla until well blended; add eggs. Stir in 1 1/2 cups reserved cookies and pour into crust. Sprinkle with remaining chopped cookies. Bake at 350 degrees for 40 minutes or until center is almost set. Refrigerate. Cut into bars. Yield: 18.
