Baked Potato Soup

Ingredients

  • 4 baking potatoes
  • 1/2 cup diced onion
  • 4 Tbls. Butter
  • 1/4 cup Flour
  • 3 Cups Whole Milk
  • 2 Cups Chicken Broth
  • 1 lb. Top Sirloin, seasoned with salt and pepper
  • Tomato Relish
  • 1 1/2 cups seeded and diced tomatoes
  • 1/2 cup crumbled blue cheese
  • 1/2 cup chopped fresh chives

Preparation

Step 1

Bake potatoes until tender. When slightly cool, scoop out and lightly mash flesh

Saute onion in butter in a large pot over medium heat until soft, about 5 minutes. Whisk in flour; cook 2-3 minutes

Add milk and broth; simmer until thick, 4-5 minutes. Stir in potatoes, season with salt and pepper, and simmer 5 minutes.

Sear steak to desired doneness, and then thinly slice.

Serve soup topped with sliced steak and Tomato Relish
