Savoiardi - Saviardi - Shavolette - Angel Cookie - Baby Shoes

Ingredients
- Saviardi Cookies – Italian Cookies
- (The Kitchen aid works great for these cookies)
- 4 Eggs
- 1 1/2 cups (350 ml) granulated sugar
- 3 3/4 cups (875 ml) flour
- 2 tsp (10ml) vanilla
- 1 tsp almond extract (I added this in try without first if you want)
- 1 1/4 cups (300 ml) confectioners sugar
- 1/4 cup (60 ml) water scant)
- Combine eggs, granulated sugar and vanilla – whip until THICK and yellow in color
- Blend in the flour
- Combine the confectioners sugar and scant 1/4 cup (60 ml) of water, to form a very thick icing. (use less water as you are stirring in the sugar and check for consistency)
- Blend the confectioners sugar icing into the cookie batter
- Using a pastry bag without a tip pipe 1 to 2 inches wide, by 3 to 4 inch long
- put cookies on a parchment lined cookie sheet or a greased tin foil lined sheet.
- Bake the cookies with powdered sugar, just like they do in the bakeries for a really authentic bakery cookie

Yes Gretchen I have but results only give recipes for ladyfingers. This cookie is made in many itilian bakeries in NYC and it’s boroughs. I belong to a group on FB called Itilian recipes from Bensonhurst and we all are searching and wanting to make this cookie. It seems to be a well guarded secret lol. I was even on sights from Italy, and they are blogging too that this recipe is nowhere to be found. Well if you should ever come across it and are willing to share, please email me. Maryanne is the cookie your looking for called Saviardi Cookies? After they are baked they have a thin white coating on top and soft inside. I have tried so many recipes for years and they were always wrong. If you want I will send you it. These are just like the ones from the bakery they are not the cake like lady fingers. It is the confectionery sugar in the mix that gives it that white thin crunch on top when baked. I will be glad to send it to you. Sophia

Hi Gretchen,
I was wondering if you had a recipe for an Italian cookie called shavolette, also know by the name angel cookie and baby shoes. It’s a flat cookie with some kind of white coating on the top, maybe meringue. Thanks for your help.

Gretchen, I think the cookie Maryann is looking for is called Saviardi. When cooked it has a white coating on top when baked caused by the confectionery sugar that it is baked with. I asked her to email me and I will be glad to send her the recipe. It took me years to find this on the internet called top secret recipes on the net. I know if you saw it you would know the cookies.
