Ingredients
- 2/3 cup sugar
- 1/3 cup vegetable oil
- 1/3 cupsoy yogurt
- 1 tsp vanilla
- 2/3 cup flour
- 3/4 tsp banking soda
- 1/4 tsp baking powder
- 1/4 tsp cinnamon
- 1/4 tsp ginger
- 1 cup finely grated carrots
- 1/4 walnuts
- 1/4 cup raisins

Step 1
1. Preheat oven to 350"F Line muffin tine with paper liners or lightly coat with nonstick spray
2. In a medium bowl, mix together sugar, veg oil, yogurt, and vanilla. Sift the dry ingredients together then add to the wet mixture.
3. Fill the cupcake liners 2/3 full - bake for 26 - 28 min.
