Ingredients

  • 4 Tablespoons Olive Oil
  • 1 large Onion- chopped
  • 1 stalk celery- sliced
  • 1 large carrot- sliced
  • 1 clove garlic- minced
  • 1 14 oz tomatoes in juice
  • 4 cups beef broth
  • 1 1/2 C water
  • 1 1/2 teaspoons thyme
  • 1 1/2 teaspoons basil
  • 1/2 teaspoon pepper
  • 1 large potato- diced
  • 4 oz small pasta
  • 2 Cup thinly sliced cabbage
  • 8 oz fresh green beans- cut diagonally
  • 1 16 oz can white canellini beans undrained
  • 4 Tablespoon grated Parm cheese
  • salt to taste

Preparation

Step 1

Saute onion, celery, and carrot in oil for 4 min. Add garlic, saute 1 min more. Add Tomato and juice, beef stock, water, thyme, basil and pepper. Bring to boil. Add potato, cook uncovered for 10 min over med heat. add cabbage, green beans, white beans, pasta and liquid. Cook 10 min. Stir in Parm cheese. add salt to taste
