Ingredients

  • 4 cups Napa Cabbage (thinly sliced)
  • 1/4 cup Rice Wine
  • 1/4 cup Sambal
  • 1/4 cup Sugar
  • 1/4 cup Scallions (thinly sliced)
  • 2 tablespoons Sesame Seeds
  • Daikon Radish Kimchi
  • 4 cups Daikon Radish (julienne)
  • same ingredients as Napa Cabbage Kimchi
  • European Radish Kimchi
  • 4 cups European Radishes (halved lengthwise)
  • same ingredients as Napa Cabbage Kimchi

Preparation

Step 1


Place Cabbage in a large bowl. Bring 6 cups of Salted Water to a boil. Pour over Cabbage and let sit until Water has cooled to room temperature. Meanwhile, combine the rest of the ingredients for the Kimchi in a medium bowl and whisk to combine. Drain the Cabbage and add to the bowl with the Sambal mixture. Toss to combine. Serve immediately with Lettuce Wraps or keep in refrigerator for up to 1 week.
For Daikon Radish Kimchi:
Repeat process for Napa Cabbage Kimchi. Replace Cabbage with julienne Daikon Radish.
For European Radish Kimchi:
Repeat process for Napa Cabbage Kimchi. Replace Cabbage with halved European Radishes.
