Ingredients
- 2 Medium bell peppers.
- 1 Can Green Giant Green Bean Salad
- (or whatever brand of mixed bean salad available)
- Garlic
- 1 Red chilli pepper
- 2 Spring onions.
- 1 14.5 oz Canned tomatoes.
- 6 Large mushrooms.
- Salt and pepper to taste
Preparation
Step 1
Preheat oven to 350 degrees. Halve peppers
lengthways. Remove seeds and place on baking tray
cut side up. Crush garlic. Remove seeds from the
chilli pepper and finely chop chilli pepper,
mushrooms and spring onions.
Heat skillet sprayed with spray oil, add garlic,
chilli pepper, mushrooms and spring onions and
stir fry for 4 to 5 minutes until mushrooms have
softened. Add tomatoes and beans. Season to taste
and spoon mixture into pepper halves. Bake for 20
to 30 minutes.
