Ingredients

  • 4

    eggs, separated

  • 2/3

    cup sugar

  • 1

    (16 ounce) can drained crushed

  • pineapple

  • 2

    cups grated rind of 1/2 lemon or 1/2

  • orange

  • 1/2

    cup matzo meal

  • 1/2

    cup chopped nuts

Directions

Beat egg whites until stiff. In a separate bowl, beat yolks until thick; add sugar, well-drained pineapple, grated rind and matzo meal. fold in beaten egg whites (by hand) and spoon into greased 1 1/2-quart casserole. Sprinkle nuts over top. Bake at 350 degrees for 45 minutes, until top is delicately browned.
