- 4 eggs, separated
- 2/3 cup sugar
- 1 (16 ounce) can drained crushed
- 2 cups grated rind of 1/2 lemon or 1/2
- 1/2 cup matzo meal
- 1/2 cup chopped nuts
Beat egg whites until stiff. In a separate bowl, beat yolks until thick; add sugar, well-drained pineapple, grated rind and matzo meal. fold in beaten egg whites (by hand) and spoon into greased 1 1/2-quart casserole.
Sprinkle nuts over top.
Bake at 350 degrees for 45 minutes, until top is delicately browned.
