Ingredients
- 6 potatoes
- 2 small onions
- 2 eggs
- 2 tablespoons sugar
- 1/2 to 3/4 cup matzo meal
- 1/4 cup vegetable oil
- 1 teaspoon salt
- 1/4 teaspoon pepper

2 finely grated carrots (to distinguish it from the grey Kugel that your Auntie Rivka makes!)
The miracle of Hanukah is symbolized by the oil. You can reduce the amount of oil in this recipe if you wish. You will end up with a drier texture.
Peel the potatoes. This is an essential step. We are not here to add fiber to your diet by not peeling the potatoes in this recipe.
Finely grate the potatoes on a hand grater. Do the same with the onion & carrot.
Squeeze out any excess liquid. Add the eggs and mix well. Add the salt, pepper and sugar. Add the matzo meal a little bit at a time and mix until the matzo meal is fully absorbed. Add ONLY as much matzo meal to yield a texture that is just about but not quite runny. Add the oil and blend well.
Grease an oblong loaf pan. Preheat your oven to 350 degrees. Turn the batter into the loaf pan.
Place the loaf pan in the oven. Bake for about 40 minutes or until the top is golden brown.
