Ingredients
- 2 cups flour
- 3/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1/4 cup butter, softened
- 2 eggs
- 1 1/2 cups mashed banana, about 3 bananas
- 1/3 cup lowfat sour cream
- 1/2 teaspoon cardamom
- 1/3 cup pistachio nuts, finely chopped
Preparation
Step 1
1. Heat oven to 350.
2. Combine flour-salt.
3. Beat sugars and butter until well-blended. Beat in eggs one at a time. Add banana-sour cream, beat until blended. Add flour, beat in just until moist. Stir in pistachios.
4. Spoon into 9" sprayed loaf pan. Bake 1 hour, or until tester tests clean. Cool 10 mins in pan on rack, then out of pan on rack.
Notes: Excellent! Probably the fact that I love all things cardamom has something to do with it. Subs: Used whole wheat pastry flour for half of the all-purpose, cut down the sugar (white) by 2 tbsp, used eggbeaters, and walnuts and pecans instead of pistachios. Among the favorites of banana bread.
