Caramel Crunch Apple Pie

Was looking for an old-fashioned apple crisp recipe and found this. Looked to good to pass up. Found in Opal Dunbar's collection though I don't think she ever made it.

Ingredients
- 1 pie shell
- 1/3 cup brown sugar
- 1 teaspoon cinnamon
- 1 teaspoon lemon juice
- 6 cups apples
- 1/2 cup sugar
- 2-3 Tablespoons flour
- 1/2 pount (28) caramels
- 3/4 cup evaporated milk
Preparation
Step 1
Prepare pastry for 1 crust 9" pie. Flute edge - do not prick or bake. Combine remaining pie crust with brown sugar and 1/2 teaspoon sinnamon. Press lightly into bottom of 13x9x5 pan. Bake at 425 degrees for 8-10 minutes or until golden brown. Cool and stir with spoon to crumble.
Sprinkle lemon juice over apples. Mix flour, sugar, and remaining cinnamon. Combine with apples. Place in pie pan. Cut a circle of foil to cover apples - press down firmly - do not cover pastry. Bake at 425 degrees for 10 minutes then at 375 degrees for 30-40 miutes until apples are tender.
Melt caramels and milk over boiling water (about 30 minutes). Remove foil, pour caramel over apples. Sprinkle with Crumb Mixture. Bake 5 minutes longer. Cool.
