Amish Breakfast Casserole

Ingredients

  • 1 * 1 pound sausage, browned
  • 10-12 * 10-12 eggs, lightly beaten
  • 2 * 2 cups shredded cheddar cheese (or cheese of choice)
  • 1 1/2 * 1 1/2 cups cottage cheese
  • 4 * 4 cups hash brown potatoes
  • 1 * 1 medium sweet onion, chopped
  • 1 1/4 * 1 1/4 cups shredded cheddar cheese

Preparation

Step 1

Grease a 9x13 baking dish.

1. In a large skillet, cook sausage; drain.

2. Peel potatoes and shred with grater to make hashbrowns. Brown in skillet with onion.

3. In a bowl, combine eggs, cheddar cheese, and cottage cheese. Stir in sausage.

3. Pour a little bit of egg mixture into baking dish.

4. Sprinkle in all of hashbrowns & onions.

5. Pour the rest of egg mixture over hashbrowns.

6. Sprinkle with cheese.

4. Bake, uncovered, at 350 degrees F for 35-40 minutes or until set and bubbly. Let stand for 10 minutes before cutting.
