BLACK BEAN SOUP

Ingredients

  • 4 c. chicken broth (canned)
  • 5 cloves garlic -- finely chopped
  • 1 chopped med. onion
  • 1 c. chopped celery
  • 1 tsp. ground coriander
  • 1/4 tsp. red round pepper
  • 1/4 tsp. salt
  • 3 cans drained black beans -- (15 oz.)

Preparation

Step 1

In medium saucepan, simmer broth, garlic, onion, celery and seasonings for 1 hour. In blender, puree 1 can black beans, add to soup. Stir in 2 cans black beans and heat. 1 cup cooked pasta may be added.
