Blue Cheese Potato Salad

Ingredients

  • 5 pounds Yukon gold potatoes
  • 1 package cream cheese, softened
  • 1 bottle (8 ounces) blue cheese dressing
  • 1 cup or so of blue cheese crumbles
  • 1-1/4 cups mayonnaise
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 medium-size red onion, diced
  • 3 cloves garlic, minced
  • dill

Preparation

Step 1

1. Boil potatoes until done, careful not to overcook. Drain and rinse under cool water.

2. In a large bowl, stir cream cheese, dressing, blue cheese crumbles, mayonnaise, salt and pepper, onion, garlic & dill; mix well.

3. When potatoes are cool enough to handle, cut into cubes. Stir in blue cheese mixture.

4. Refrigerate until ready to serve.
