Cashew Chicken with Ginger

Ingredients

  • 1 1/2 pound boneless chicken breast, cubed
  • 1 TBSP toasted sesame oil
  • 3/4 cup roasted cashews
  • 1 TBSP minced fresh ginger
  • 1/3 cup low sodium chicken broth
  • 1 TBSP chili garlic sauce

Preparation

Step 1

1. Cook chicken in a sauce pan of boiling salted water until cooked through - 3 -4 minutes.

2. Heal oil in a skillet over medium-high. Add cashews, stir-fry until fragrant, 1 minute. Add ginger and stir -fry 30 seconds. Stir in soy sauce and add chili garlic sauce, they add cooked chicken. Stir fry 2 minutes more.
