Koosa - Stuffed Lebanese Squash

This recipe comes from a very old cookbook, from the Lebanese Church Ladies' Guild, from Cleveland, OH. This is a very traditional Lebanese Koosa recipe.

Ingredients

  • 12 Lebanese green squash or zucchini, 4-5 inches long
  • 1 1/2 lb ground lamb or beef or mix
  • 1 1/2 cup rice
  • 1 12oz can tomatoes
  • 1 8 oz can tomato sauce
  • salt and pepper to taste
  • dash of cinnamon
  • 1 1/2 cup water
  • 1/8 tsp garlic powder
  • crushed, dried mint to taste (optional)

Step 1

Wash and brush outside of squash, cut off top, core and scoop out pulp, leaving a thin shell. Mix meat with rice, 1/2 cup of the canned tomatoes, salt, pepper and cinnamon. Loosely stuff squash with mixture, leaving about 1 inch of space on top to allow rice to expand. Place in kettle. Add remaining tomatoes, tomato sauce, water and garlic. Sprinkle mint on top. Cover and cook over low heat 45 minutes or until tender.
