Portuguese Fish Fillets-Mrs. Angelo

Ingredients

  • fish fillets
  • tomato
  • salt(Kosher or Portuguese)
  • pepper
  • garlic(large ones)
  • wine
  • clam juice
  • 1 large onion

Preparation

Step 1

Scald tomato to remove skin and cut in half horizontally . Remove seeds, then chop.
Chop onion and garlic
Mix altogether, sprinkle with salt and pepper.
Place in baking dish.
Place fillets on top of mixture, sprinkle a little more salt.
Pour about 3/4 cup of white wine and clam juice to cover the fish.
Cover with buttered wax paper.
Bake in oven until cooked.
