Ingredients

  • 4

    cup Chick peas, dried, soaked overnight

  • 2

    large onions, chopped

  • 1

    whole head of garlic, chopped

  • 2

    bunches parsley

  • hot green peppers to taste

  • 1

    tsp baking powder plus

  • 2

    tsp cumin

  • ¼

    tsp baking soda

  • salt and pepper to taste

  • ½

    cup flour

Directions

Soak chick peas in water overnight. drain. Combine chick peas, onions, garlic, parsley and hot peppers together. Grind twice through a meat grinder. Add salt, pepper, cumin and baking powder. Mix thoroughly. When ready to fry the falafel, add flour and baking soda. Shape into patties 1 1/2 inch in diameter and 1/2 inch thick. Fry in deep hot oil until lightly brown and crisp.
