Ingredients
- 1 onion, chopped
- 1 lb peeled and cut-up parsnips
- 2 peeled and cup-up apples
- Chicken broth (or vegetable)
Preparation
Step 1
Heat olive oil in saucepan. Cook onion until soft. Add parsnips, apples and enough chicken stock to cover. Simmer until the parsnips are very tender.
Puree until smooth, adding water or broth as necessary to adjust the consistency.
