Ingredients
- 2 Cup All-Purpose Flour
- 1 1/2 tsp baking powder
- 1/2 tsp Salt
- 3/4 Cup milk
- 1 Large Egg
- 1/2 tsp vanilla extract
- 1 stick unsalted butter (room temp)
- 1 Cup Sugar
- 1 1/2 Cup blueberries (fresh)
Preparation
Step 1
1. Preheat oven to 400°F
2. Grease muffin pan or prep cupcake papers
3. Sift together flour, baking powder and salt
4. In separate bowl mix together milk, egg, and vanilla extract
5. Cream butter and sugar together
6. Alternate adding wet and dry mixture and mix until smooth
7. Toss together washed and dried blueberries with some light flour. Fold blueberries into batter gently
8. Divide into muffin pan
9. Bake until done, 15-20 min
Variations: Blueberry bran muffins - replace 1/2 cup of flour with wheat or oat bran
Honey - replace 1/2 cup sugar with 1/3 cup of honey
Streusel topping - In a bowl, blend 1/4 cup quick cooking oats, 1/4 cup chopped walnuts, 1/4 cup tightly packed brown sugar, 1/4 cup all-purpose flour, and 1/8 teaspoon of salt. Cut 1/2 stick of cold butter into mixture either by hand or food processor.
