Ingredients

  • For the Honey-Saffron Syrup:
  • 1 cup sugar
  • 1/2 cup boiling water
  • 1/4 teaspoon saffron threads (use less for subtler flavor)
  • 1/4 cup honey
  • For the Cake:
  • 1 cup olive oil, plus more for coating pan
  • 1 1/4 cups flour
  • 1 cup finely ground cornmeal
  • 1 cup sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 large eggs
  • 1 cup milk
  • 1/4 teaspoon saffron threads
  • 1/2 cup chopped pistachios
  • Maldon sea salt or fleur de sel flakes, for finishing (optional)

Step 1

Preheat oven to 325 degrees. Grease a 9-inch cake pan with olive oil, then line it with parchment paper. Make honey-saffron syrup: Stir all ingredients together until sugar dissolves and syrup takes on a brilliant yellow color. Set aside.

Make Cake Batter:
In a mixing bowl, mix together flour, cornmeal, sugar, baking soda, baking powder and salt, and make a well in the center. Add eggs, milk, saffron and 1 cup oil to well.

Use a whisk to incorporate dry ingredients into liquid in center of well, starting in center and moving outward. Eliminate lumps in liquid before incorporating more dry ingredients into wet ingredients. Use a rubber spatula to scrape down sides and bottom of bowl, making sure batter is uniform and there are no dry spots. Pour batter into cake pan, then top with pistachios.

Place cake in oven and bake until set and a cake tester stuck into center comes out clean, 40-50 minutes. Remove cake from oven and let cool slightly. Pour all of honey-saffron syrup over cake while it’s still warm. (It may seem like a lot of syrup, but cake will absorb liquid.) Let cake cool 30 minutes more.

Use a knife to loosen cake edges and invert to remove cake from pan. Carefully turn cake again so pistachios are on top. Sprinkle Maldon salt over cake, if using.
