Ingredients

  • 1/2

    cup quinoa, dry

  • 1

    cup chick peas

  • 1/2

    cucumber, chopped

  • 2

    tomatoes, chopped

  • 3

    scallions, chopped

  • 1/2

    cup parsley, chopped

  • 1/2

    cup cilantro, chopped

  • Dressing:

  • 1/4

    cup lemon juice

  • 2

    tbsp tahini

Directions

Put 1 cup water and quinoa in a small saucepan. Over high heat, bring to a boil, then lower heat to a simmer. Cover and cook, stirring occasionally, until all water is absorbed, about 7 minutes. Let cool for 30 minutes. Add quinoa to a large bowl with rest of ingredients. For dressing, whisk ingredients together. If it's not thin enough to pour, add a bit of water and continue to whisk. Toss with salad to serve.
