Ingredients
- Dressing:
- 1/2 cup quinoa, dry
- 1 cup chick peas
- 1/2 cucumber, chopped
- 2 tomatoes, chopped
- 3 scallions, chopped
- 1/2 cup parsley, chopped
- 1/2 cup cilantro, chopped
- 1/4 cup lemon juice
- 2 tbsp tahini

Step 1
Put 1 cup water and quinoa in a small saucepan. Over high heat, bring to a boil, then lower heat to a simmer. Cover and cook, stirring occasionally, until all water is absorbed, about 7 minutes. Let cool for 30 minutes.
Add quinoa to a large bowl with rest of ingredients.
For dressing, whisk ingredients together. If it's not thin enough to pour, add a bit of water and continue to whisk.
Toss with salad to serve.
