Ingredients
- 1 kg onion
- 1 kg leek
- 1 kg celery
- 1 kg carrot
- 1 kg turnip
- 1 kg butternut squash or pumpkin
- 2-3 liters of good vegetable or chicken stock
- 3 peeled potatoes
- cream
Preparation
Step 1
Chop first 4 ingredients and sauté in butter
Chop turnip and squash and add to other vegetables
Add stock and potatoes
Simmer until all cooked
Add cream if desired and add seasonings
