Ingredients
- SYRUP
- 1/4 cup superfine sugar
- 1/2 cup dry red wine
- 1 star anise
- 1 tsp lemon zest
- SALAD
- 1 2/3 cups strawberries, hulled and halved
- 1 cup blueberries
- 1 1/4 cups raspberries or other red berries
- 1 1/4 cups cherries, halved and pitted
- 5 small red plums, pitted and quartered
- yogurt, to serve
Preparation
Step 1
To make the syrup, place the sugar, wine, star anise, lemon zest, and 1/2 cup of water in a small saucepan. Bring to boil over medium heat, stirring to dissolve the sugar. Boil the syrup for 3 minutes, then set aside to cool for 30 minutes. When cool, strain.
Mix the fruit together in a bowl and pour on the red wine syrup. Mix well to cost and refrigerate for 1.5 hours/ Serve the fruit dressed with a little syrup and yogurt.
