  • 1 C candies red cherries
  • 1 c candied green cherries
  • 1 c raisins
  • 1/2 c mixed peel
  • 3/4 c dark rum or brandy
  • 1 c coarsley chopped walnuts or blanched almonds
  • 2 c flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 6 (1 oz/28g) squares unsweetened chocolate
  • 3/4 c butter
  • 1 1/3 c sugar
  • 4 eggs
  • 1/2 c milk
  • 1 1/2 tsp vanilla
  • dark rum



Step 1

grease 9 x 13 baking pan
cut cherries in half and put in bowl with raisins and peel. stir in 3/4 c rum. cover and marinate for 30 minutes. stir flour b powder and salt together.melt chocolate in microwave
beat butter and sugar together until creamy. add eggs one at a time beating constantly . beat in milk, vanilla and then melted chocolate. drain any rum that was not absorbed by the frut and beat it in too. Gradually beat in dry ingredients. stir in nuts and marinated fruit. put into pan and smooth the top. bang the pan on counter to get rid of air bubbles. bake in centre of oven for 45-50 minutes 325
cool in pan on a rack. brush with additional rum. wrap in foil and keep refrigerated or freeze.
