Balsamic Pasta

Ingredients

  • 1 lb mini penne pasta or macaroni
  • Salt and freshly ground black pepper
  • 3 large garlic cloves, crushed (NOT MINCED)
  • 3 Tbsp balsamic vinegar
  • 1/2 cup olive oil
  • Parmesan cheese for serving

Preparation

Step 1

Meanwhile, mash the garlic with 1 teaspoon salt in a medium bowl using a spoon. The salt helps to make this easier and you will want to create something similar to a paste. Whisk in the vinegar and then the remaining 1/2 cup of oil. Season with 1/4 teaspoon pepper.
