Caroline Cole Slaw

Ingredients

  • Dressing:
  • 1 Large Head of finely shredded cabbage
  • 1 Medium bell pepper, finely chopped
  • 1 Medium finely chopped sweet onion
  • 2 carrots grated
  • 1 cup sugar
  • 1 teaspoon salt
  • 2/3 cup vegetable oil
  • 1 teaspoon dry mustard
  • 1 teaspoon celery seed
  • 1 cup cider vinegar

Preparation

Step 1

Combine all vegetables in a large bowel. In a saucepan over medium heat combine the ingredients for the dressing: bring to a boil. Simmer,stirring,until sugar has dissolved; pour over vegetables and toss well. Cover and refrigerate until fully chilled.
