Couscous Crusted Salmon

Ingredients

  • 1 cup water
  • 3/4 cup couscous
  • 1/4 cup refrigerated pesto
  • 1/4 tsp. cider vinegar
  • 1/8 tsp. pepper
  • 4 salmon fillets
  • 1/4 tsp. salt

Preparation

Step 1

1. Preheat oven to 450 degrees

2. Heat 1 cup water, in 1-quart saucepan to boiling on high. remove from heat; stir in couscous, pesto, cider vinegar and pepper. Cover and let stand 5 minutes.

3. Place 4 salmon fillets (6 oz. each), skin side down on a foil-lined cookie sheet. Season with salt.

4. Mound couscous mixture on top of each fillet, pressing into an even layer.

5. Bake in upper third of oven 12 to 15 minutes or until salmon is just cooked.
